If you love to travel in an RV you are probably always up for a new and easy recipe you can cook up right inside your RV kitchen. These chicken pepper pockets are not only easy to prepare, they are portable! You can whip ‘em up and take them out on your next hike or just enjoy them at the campsite. No plates or utensils required.

Here is how to make them:

Ingredients-

  • 2 cups of boneless skinless chicken breast (about 3 breasts)
  • 4 ounces of cream cheese
  • 3 tablespoons of melted butter, 2 tablespoons for filling and 1 tablespoon for brushing the rolls
  • Salt and pepper to taste
  • 3 tablespoons of milk
  • Small amount of green onion to taste (optional)
  • Small amount of green bell pepper to taste (optional)
  • 1 can of refrigerated crescent roll dough
  • Breadcrumbs (optional topping)
  • Water to boil chicken

Tools-

  • Pot to boil water in
  • Knife and cutting board
  • Mixing bowl
  • Spoon
  • Pastry brush
  • Cookie sheet or baking pan/dish
  • Two forks or a mixer

Preparation/Cooking Instructions

  1. Grab the cream cheese and let it sit on the counter until it reaches room temperature.
  2. Pre-heat the oven to the temperature on the crescent roll dough package
  3. Fill a medium to large pot with water and bring it to a rolling boil
  4. Place the chicken breasts into the boiling water and cover until cooked through, about 20 minutes
  5. Once chicken is cooked through set it aside and let it cool
  6. While the chicken is cooling, get out the knife and cutting board and chop up the green onion and green bell pepper
  7. Now that the chicken has cooled shred it with two forks or a hand mixer or stand mixer
  8. In a medium mixing bowl add in room temperature cream cheese, butter, boiled shredded chicken, chopped green onion, chopped green bell pepper, and stir until well combined
  9. Add salt and pepper to taste to the cream cheese filling mixture and stir until well combined
  10. Grab the cookie sheet or baking dish and roll out a few crescent rolls
  11. Fill the unrolled crescent dough with a spoon full of the chicken filling mixture
  12. Pull the dough edges up around the filling mixture and close
  13. Repeat with remaining crescent rolls until all are filled
  14. Melt the remaining butter and brush the top of each crescent roll
  15. Sprinkle each roll with breadcrumbs
  16. Place the rolls into the oven and bake as directed on the refrigerated crescent roll packaging
  17. Once they are golden brown remove from oven and let cool a little, then enjoy!
