When I search for camping breakfast menus all I seem to find are things to eat ON a campfire. But what if you have the benefit and luxury of a fully stocked kitchen? Are we still pulling out the box cereal and milk? Maybe, but if you want some better ideas without the need for a campfire then this post is for you. Don’t get me wrong. I do love cooking on the campfire, but not everyone likes to make a full-on campfire in the morning. Plus, if you want something quick and easy, these recipes are here for you. With your fully equipped Kitchen in your NW Adventure Rentals RV, Motorhome or Travel Trailer, you’re set to do some great cooking!

Easy Breakfast Burritos.

The best thing about this dish is that you can totally make it at home before you leave and tuck it in the fridge until you’re ready to eat.

Makes 8 Burritos

  • 6-8 eggs
  • 8 strips of bacon or 8 sausage links
  • 2 medium potatoes or hash browns
  • 1 1/2 cup shredded cheese
  • 8 large flour tortillas
  • salt and pepper

Scramble the eggs to your liking. Set aside. Prepare the bacon or cook the sausage. Cut up either when complete and set aside. Peel and dice the potatoes and cook in vegetable oil in a skillet until crispy on the outside and soft on the inside. (Poke with a knife and if it slides easily in and out of the potato, it’s done) OR fry up or saute hash browns per package instructions. Microwave the tortilla for 10 seconds just to make it pliable. Layer eggs, shredded cheese, sausage or bacon, potatoes and dust with salt and pepper if desired. Roll up and then roll up each one in a separate foil sheet. Continue making until all ingredients and tortillas are used up. For a kick, sprinkle in red pepper flakes or cayenne. Store all in an air tight container in the fridge in your RV until you want to serve. Then either put on a BBQ outside still in the foil wrapper for 10 minutes OR on a campfire (if you still want to get your campfire on in the AM) or unwrap and crisp up in a saute pan on the RV stove until lightly browned.

Overnight Oatmeal

This is a great option for making at home as well and just throwing in the RV fridge before heading out.

  • 1/3 C Yogurt (Greek works best because it’s thick)
  • 1/2 C rolled oats
  • 2/3 C milk – can be coconut, soy, almond, etc..
  • 1/2 tsp Vanilla
  • pinch of salt
  • 2 Tablespoons maple syrup or honey
  • Optional: From here you can throw anything else you like in, such as 2 Tablespoons of cocoa, chia seeds, flax meal or seeds, hemp seeds, wheat germ, just about anything that you want to boost the health benefits.

Mix it all together and spoon in to a jar or air tight container. You can make as much of this as you like just by multiplying the ingredients. Once you are ready to serve, you can either eat it as is or heat it up and top it with anything you like such as apples, nuts, berries, dried fruit, chocolate chips or cream.
